Creamy Salmon with Cherry Tomato and Spinach

Ingredients:

  • 4 salmon fillets
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • ½ onion, chopped
  • 2 garlic cloves, minced
  • 1 cup of cherry tomatoes, halved
  • 2 cups of fresh spinach
  • ½ cup of heavy cream
  • 1 tablespoon of fresh lemon juice
  • 1 tablespoon of fresh parsley, chopped (optional)

Instructions:

  1. Season the salmon fillets with olive oil, salt, and pepper.
  2. Heat a large skillet over medium-high heat. Once heated, add the salmon fillets and cook for 3-4 minutes on each side until golden brown. Remove the salmon fillets from the skillet and set them aside.
  3. In the same skillet, add the chopped onion and minced garlic. Cook for 2-3 minutes until the onion is translucent.
  4. Add the cherry tomatoes and cook for another 2-3 minutes until they begin to soften.
  5. Add the fresh spinach to the skillet and cook for 1-2 minutes until it wilts.
  6. Add the heavy cream and stir well. Cook for 2-3 minutes until the sauce thickens.
  7. Add the fresh lemon juice and stir well.
  8. Return the salmon fillets to the skillet, skin-side down.
  9. Cover the skillet with a lid and cook for 5-7 minutes until the salmon is cooked through.
  10. Garnish with fresh parsley (optional) and serve immediately.
