Ingredients:
- 4 salmon fillets
- 1 tablespoon of olive oil
- Salt and pepper to taste
- ½ onion, chopped
- 2 garlic cloves, minced
- 1 cup of cherry tomatoes, halved
- 2 cups of fresh spinach
- ½ cup of heavy cream
- 1 tablespoon of fresh lemon juice
- 1 tablespoon of fresh parsley, chopped (optional)
Instructions:
- Season the salmon fillets with olive oil, salt, and pepper.
- Heat a large skillet over medium-high heat. Once heated, add the salmon fillets and cook for 3-4 minutes on each side until golden brown. Remove the salmon fillets from the skillet and set them aside.
- In the same skillet, add the chopped onion and minced garlic. Cook for 2-3 minutes until the onion is translucent.
- Add the cherry tomatoes and cook for another 2-3 minutes until they begin to soften.
- Add the fresh spinach to the skillet and cook for 1-2 minutes until it wilts.
- Add the heavy cream and stir well. Cook for 2-3 minutes until the sauce thickens.
- Add the fresh lemon juice and stir well.
- Return the salmon fillets to the skillet, skin-side down.
- Cover the skillet with a lid and cook for 5-7 minutes until the salmon is cooked through.
- Garnish with fresh parsley (optional) and serve immediately.
